Is anyone seeing a theme here? Um, I guess I’m pretty ecstatic about breakfast this week. In all forms. Eggs, Chia Pudding, and now grain free granola. I think it’s safe to say that if you come to my house on Christmas morning, I’ll have plenty for you to eat. I like to think my God given gift is just feeding people random gluten free creations.

Speaking of gifts. This is my last batch of edible Holiday gifts. I made gluten free bread/muffins for neighbors, healthy bites for friends, and now this toasted coconut berry grain free granola will be part of our Christmas Eve family present exchange.  Shh… don’t tell them though. They usually expect food, they just never know what they will be getting. Haha, yes, I am that family member. The one who really doesn’t know what to get anyone besides food and gift cards. Not necessarily a bad thing though, right?

Besides, food is love. Food pretty much makes everyone happy. Making or baking a gift specifically for someone is thoughtful. Food/edible gifts are affordable. Food/edible gifts are customizable.

You betcha! Customizable food gifts are lifesavers when you have friends/family who need to be on a special diet, or have dietary preferences for themselves and/or their kids! Can you relate? I sure can.

And since my family is pretty much obsessed with all things berries and coconut (especially toasted coconut) and nuts, this grain free granola gift might just make me the favorite daughter/sister/cousin.  Hence this grain free granola. It’s sounds so hippie and uber healthy, but it’s taste is far from bland. That I promise! It doesn’t hurt that it’s also vegan, paleo, lower FODMAP, etc. You get my point. It’s GOOD FOR YOU and very simple to make!

Chop the nuts. Add your natural sweetener and spices. Bake. Add your coconut to the oven last. Bake a little more.

Once it all toasted and scrumptious smelling, remove from oven, mix it up and add in your dried berries!

See, a simple good tasty gift!

These types of edible gifts are also feel good gifts. Yes, this grain free granola is so good it makes you feel good, but that’s not what I mean or where I’m going with this.

I mean, receiving grain free granola as a gift is not all that exciting, but it does make that recipient feel good. Let’s face it, sometimes the last thing you want after a month of cookies and chocolate and drinks are more sweets. Unless you’re under the age of 12, then that’s all you want all the time, haha.

But seriously, think about what you are GIVING!  You are giving the gift of health. A jump start into healthy (or healthier) eating for 2016. A satisfying snack that makes you FEEL GOOD to snack on, both mentally and physically. That’s priceless ya’ll!

Toasted Coconut and Berry Grain Free Granola {Vegan, Paleo}

Save Recipe

Ingredients

  • 1 cup larger size whole mixed nuts (like brazil nuts, hazelnut, or walnuts)
  • 1 cup raw almonds
  • 1/2 cup pumpkin seeds
  • 1/4 cup coconut oil
  • 1/4 to 1/3 cup maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • dash of sea salt
  • 2/3 cup unsweetened coconut flakes
  • 2-3 tbsp chia seed (optional)
  • 1 cup to 1 1/4 cup dried berries (blueberry, cranberry, etc.)

Instructions

  1. Preheat your oven to 325F and Line a baking sheet with parchment paper
  2. In a blender or food processor combine your nuts/almonds. Pulse about 5-8 times until nuts are chopped but not ground.
  3. Transfer to a large bowl and add in your pumpkin seeds, mix together.
  4. In another bowl, combine your coconut oil, extract, and maple syrup. Pour this over the nuts and mix. Then add in your spices and mix again till evenly coated.
  5. Spread nut mixture evenly onto the baking sheet and sprinkle a little sea salt on top. Maybe 1/4 tsp or so.
  6. Place in oven and bake for 15 minutes.
  7. Remove from oven and toss the nuts/seeds on the tray so they slip sides. Place back in oven and bake again for another 15 minutes.
  8. Remove from oven one last time, toss nuts/seeds, then add in your coconut. You can add the coconut to the nut/syrup baking tray or on a separate baking tray. Just make sure it's spread evenly onto the tray.
  9. Bake for another 5-8 minutes or until coconut is toasted.
  10. Remove and let cool.
  11. Once cooled, place coconut/nut granola in a bowl and mix it up a little more. Add in your dried berries and toss all together.
  12. Add any additional spices you'd like to finish.
  13. Store in a seal tight container or in gift jars.

Notes

if you want to prevent the granola from caking, add in 1 tbsp of egg white protein or pea protein (vanilla) after it's baked and toss all together.

Makes about 3 - 4 cups depending on how finely you chop the nuts.
