There are a few things I don’t do well in life. Okay a lot. But as far as cooking goes, cooking just eggs are not my forte. In fact, I tend to mess them up a lot. Unless they are scrambled. Don’t even ask me to poach an egg for you. I overcook it every time! This is why I tend to solely use eggs in casseroles, in paleo baking creations, or baked eggs that are SECURELY packed with veggies. Those are my cheat sheets to cooking eggs and why I am sharing this Foil Packet Indian spiced baked potato and egg recipe with you today. It’s my way of asking… Hey, I’m not a pro in the kitchen but can I get some points for ease and creativity?And maybe some bonus points for health and FLAVOR? Pretty Please?
Begging points aside, these foil packets recipe with baked potato and eggs really do make redeem my lack of egg baking skills. And I have the FOIL PACKETS to credit that. Ya’ll… WHY HAVE I WAITED SO LONG TO MAKE FOIL PACK MEALS? I mean yes, we grill in foil, but baking foil packed meals in the oven? Nope. Never. And holy moly does it make for super fast clean up. You know I’m all about CLEANING these days. So yes, the less mess the better.
Now let’s talk about the spices and those health and flavor bonus points that MAKE these foil packets even more super duper. Yes I just said duper. It’s Monday, we need some fun words. But I digress… anyways…
SPICES! We are using a lovely combo of Indian spices to season the potatoes in these foil packets. That means turmeric/curry powder, paprika, garlic, and black pepper.
But there’s something even more magical about this spice combination. They work together with the healthy fats in eggs and natural carbohydrates in baked potatoes to keep us HEALTHY and our body’s immunity in check!
Here’s why —> Turmeric!
Turmeric (in the curry powder mix above) contains an active compound called curcumin. This compound/spice is one of the most powerful anti-inflammatory agents and has some pretty powerful antioxidant effects. These antioxidants can help fight free radicals. You know, the ones that build up oxidative damage to our muscles after all that training? Or that build up after we go bonkers and stress out? Yes, those free radicals. And boy do we need a powerful antioxidant to help combat and protect our system. Anyway, here’s the kicker, the cool part. This spice not only neutralises free radicals on its own, but then it helps increase the body’s own antioxidant enzymes.
Now, pair that with the plant antioxidants found in potatoes and more antioxidants found in the amino acids of a egg yolk, and you got yourself ONE SUPER POWER HOUSE ANTIOXIDANT FOIL PACKET MEAL!
Side note –> it’s all about that YOLK ya’ll! It contains 2x as many antioxidants as an apple.

Eggs, Spiced Baked Potatoes, and Foil. Who knew that one little dish could do so much. Plus it makes my egg baking skills look good. Most crucial. Kidding. Kinda.
Yields 4
303 calories, 18 grams fat, 26 carbs, 3 grams fiber, 9.5 grams protein. 1.5 grams sugar, 12% IRON and 35% vitamin C

Ingredients
- 4 cups of sliced golden yellow potatoes (use sweet potato is paleo)
- 1/4 cup olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp minced garlic (dried or fresh)
- 1/2 tsp curry powder seasoning with turmeric
- 1/4 tsp sea salt and black pepper each
- Foil
- 4 eggs
- optional topping - red pepper/sriracha, etc.
Instructions
- preheat oven to 400F.
- Slice your potatoes and toss them with olive oil and your seasonings.
- Place about 1 cup of potatoes in a 8x8 or 9x9 piece of foil (packet or cupped).
- Repeat until you get 4 packets. Place packets on baking tray or straight on oven rack for about 25 -30 minutes until potatoes are tender but not fully cooked.
- Remove tray and place and crack an egg on top of each foil pack.
- place back in oven for about 10 minutes or until yolks look firm but not overcooked.
- Remove and garnish with any extra spices.
- Place on plate or bowls and enjoy!
- Great with avocado or ranch added.
- Feel free to pack in more veggies when you cook your potatoes. Super easy and fun!
Notes
These can easily be made on the grill or over a campfire as well. Cook the potatoes first for about 20 mins or until tender then add your egg! simple
