 Hey all!  Or should I say ya’ll? Hey Ya’ll! So..  I totally switched things ups this week with my gluten free recipe schedule. Okay I really don’t have a schedule per se but I just couldn’t help sharing these Vegan Mexican Chocolate gluten free Muffins sooner versus later.. I felt the urge of inspiration and had to share!  Although now  I feel little bit guilty  because I leave you hanging at the end of this recipe. I am hoping you all will understand. Hear me out, when you have Mexican Chocolate in gluten free muffin form, you are allowed to eat it for breakfast.

But then…

When you top those gluten free muffins with a vegan Homemade Dulce de Leche sauce (which I will share on Friday) these vegan gluten free muffins will magically turn into a dessert or cupcake of some sort. But You”ll have to wait till Friday for that transformation. CAN YOU EVEN HANDLE THAT? Say yes, please? Yes because waiting causes appreciation. Plus between now and Friday, I’m going to boast about all the lovely things that make Mexican Chocolate Healthy.

 I have your attention now, don’t I? So let’s talk Mexican food, chocolate, and vegan gluten free muffins. Because obviously they go together haha. And because obviously there’s this little holiday coming u p that allows us to take our Mexican food adoration to a whole new level (ahem.. cinco de mayo!).

What is it about Mexican Chocolate that makes it so A-MAZIN!?

Ohh… Glad you asked.

Typical Mexican chocolate is made with roasted and ground cacao nibs, sugar, and cinnamon. Other spices such as nutmeg and allspice may be added, along with nuts, and chilies are sometimes used as well. The natural sweetness from the sugar makes the addition of extra sweetener unnecessary. (source).

Did you catch that? Mexican Chocolate uses cacao nibs and some pretty spectacular anti-inflammatory spices.

  • Cinnamon – My fav! Helps calm us, boost brain function, and contains antibacterial properties that supports digestion.
  • Nutmeg– contains antioxidants and disease-preventing phytochemicals plus a hefty dose of Manganese which can help regulate the blood sugar.
  • Allspice– Contains an essential oil that aids in digestion. Plus it contains great anti-inflammatory properties.
  • Cacao – Known as the plant Theobroma cacao, cultivated for its seeds, known as cacao beans or cocoa beans. Super power antioxidants and helps promote healthy gut microbiome.
  • Chilies or Chili powder– antioxidant and anti-inflammatory properties, and has shown to help reduce pain in muscles or joints due to inflammation.

Now, because adding white sugar to these mexican chocolate muffins would probably undo all the health perks, I decided to naturally sweet them with the addition of dried fig! Because who doesn’t love dried fig? Plus it packs in some extra fiber making them one magical SUPER FOOD Vegan Mexican Chocolate Gluten Free Muffin! Yes, I just went there. And like I said above, I’m giving you full permission to eat chocolate for breakfast … on repeat.

Healthy VEGAN Mexican Chocolate gluten free muffins! Rich Mexican Chocolate made healthier packed in vegan gluten free muffins! Lightly sweet. Great for breakfast. Yes, I said you can have chocolate for breakfast.

Speaking of chocolate on repeat. Let’s get the recipe already cause I hear these muffins calling my name. With a spanish accident. 😉

Yields 10-12 muffins

Mexican Chocolate Gluten Free Muffins {Vegan, Healthy}

Ingredients

  • 2 cups Gluten free mutlipurpose flour mix (I used bob redmills gluten free 1:1 flour)
  • 1 and 1/2 teaspoons Baking Soda
  • 1/2 teaspoon sea Salt
  • 1 cups california dried figs (8) - chopped
  • 2 oz dark chocolate or cacao nibs (melted)
  • 1 tbsp cinnamon
  • 1/2 cup coconut Sugar
  • 1 cup almond or coconut milk.
  • 1/3 cup coconut Oil
  • 1/4 to 1/3 cup pumpkin puree (more for extra moist)
  • 1 teaspoon vanilla Extract
  • 1 tablespoon 1 tsp Apple Cider Vinegar or Distilled Vinegar
  • pinch of cayenne or chili pepper

Instructions

  1. Preheat the oven to 375F
  2. In a medium bowl, combine together GF flour, baking soda, salt. Set aside.
  3. Grind your dried figs or finely dice them. They will be adding bulk to the batter. Set aside. .
  4. Next melt your chocolate in microwave or stove top and mix in cinnamon.
  5. In a large bowl, combine the sugar, milk, pumpkin, coconut oil, extract, and vinegar. Mix well.
  6. Then add the rest of dry ingredients to the wet ingredients, stir together. Mix the rest of your spices in here too!
  7. This should be similar to a cake batter.
  8. Gently fold in the figs and melted chocolate using a spatula.
  9. Spoon into greased muffin tins about 2/3rds to 3/4 full.
  10. Bake for,about 22 minutes or until a toothpick inserted into the center comes out clean
  11. Remove from the oven and let it cool.
  12. Add extra cocoa powder or melted chocolate on top with cinnamon.
  13. I'll post a vegan dulce de leche sauce on friday that goes perfect with this too!
